Cant you jump start it with the leads going straight to the starter?
Tried a zero load test? Or pull it out plug it in and let it free spin?

Had it turn over engine once, that's it, so it's mating to flywheel ok

Ahhhhh have you connected the alternator? I can almost guarantee that's what it'll be. Same thing I had!
Ok so your battery is duff then shouldn't drop below 10Ok...so when I turn the engine over with ratchet on the pulley a couple off times, then try and start it, it will turn a bit then stop
Volts go from 12 to 7
Also, the handbrake light is staying on, even tho I've taken the keys out

Every cars different mateAgreed. But the alternator also acts like a switch, mine was draining the battery horrendously and leaving lights on the dash when unconnected but absolutely fine when connected.
